I remember getting stuff like this to work years ago on minecraft and xplane (much more complex folder structure etc) with no problem at all. Just don't copy the whole appdata, as it will have stuff in there for other apps you may not own. You may need to do the same for other games, but also backup your Document folder as most games save all of their saved games and other game info there.
